High concept: IF Quake, which is Quake as a piece of Interactive Fiction. Other interesting variants include NPR Quake, Unreal Tournament in the Cornell box (ahhhh, color bleeding), and the Doom Sysadmin tool. I can't find a good link for Ascii Doom, however...
